tablespoons butter or margarine

package Betty Crocker® four cheese mashed potatoes

cups frozen vegetables, any variety, thawed and drained
1
can (11 ounces) condensed Cheddar cheese or cream of mushroom soup
1
can (4 ounces) sliced mushrooms, drained
1
can (2.8 ounces) French-fried onions
  • 1 Heat oven to 350ºF. Heat hot water, milk and butter to a rapid boil in 2-quart saucepan. Remove from heat. Stir in 1 pouch Potatoes and 1 pouch Seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth; set aside.
  • 2 Stir remaining ingredients except onions in large bowl. Pour vegetable mixture into ungreased 1 1/2-quart casserole; sprinkle with half of the onions. Spread potatoes over onions.
  • 3 Bake uncovered 25 minutes; sprinkle with remaining onions. Bake 3 to 5 minutes longer or until mixture is hot and onions are brown.

This is a great quick meal to pull together from your pantry and freezer. Pretty tasty too. My mom liked it for lunch! I used the butter and herb potatoes, no mushrooms, 2 cups frozen mixed vegetables (cooked first) and 1 cup frozen zucchini (cooked first) Broccoli would be good in it too. I mixed the fried onions with everything because I used an 18 oz. can of Progresso non-condensed mushroom soup and I thought it would thicken up better that way, and it did. I'll make it again! For those who say it isn't healthy, I would just say, like another reviewer pointed out, you don't eat it every day and it's a nice comfort food treat with a lot of veggies in it. You can have it with a leafy green salad with some tomatoes and it's a good meal.

This was one of the best things that I've ever made! My husband practically ate the entire thing by himself. I like how you can add different veggies each time you make it, it's very versitale. Also very easy to put together.

I made my own mashed potatoes and added beefless tips from Gardein. I also used a cream of mushroom soup that was not condensed so it was more gravy-like. It was pretty good with these modifications and much better than boxed potatoes.
