pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2
cup butter or margarine, melted

egg

cup whipping cream
1/2
cup Betty Crocker® Rich & Creamy cream cheese frosting (from 1-lb container)

cups assorted fresh fruit
  • 1 Heat oven to 375°F. Lightly spray 14-inch pizza pan or 15x10-inch baking pan with cooking spray.
  • 2 In medium bowl, stir cookie mix, melted butter and egg until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until light golden brown. Cool completely, about 45 minutes.
  • 3 In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Gently stir frosting into whipped cream. Spread over cookie pizza. Arrange fruit on top.

Expert Tips

Use 2 cups frozen (thawed) whipped topping for the whipped cream.

I will again be making this for 4th of July. Make in 15x10 pan, using strawberries for red flag stripes, lemon dipped bananas or strawberries dipped in powdered sugar or any fruit (even kiwi) dipped in white chocolate for white stripes, and either blueberries or blackberries for star field, with 50 blueberries dipped in white chocolate for stars. It is always a HUGE HIT, and SOOOOOO beautiful!

I've been making this recipe for years with a few changes. I mix cream cheese & sugar to taste & I put crushed pineapple (drained) on top of the cream cheese, then add all my fruit(strawberries, kiwi, peaches, mandarine oranges, blue berries, black or red rasp. berries)! If you bake the cookie too long it will not matter, because the juice from the fruit will soften it up. I've had no trouble with this recipe keeping over nite it just gets softer & softer & better! YUM!
