1
can (16 oz) Old El Paso® refried beans
1/2
cup Old El Paso® salsa (any variety)
1/2
teaspoon chili powder
1
package (11 oz) Old El Paso® flour tortillas for burritos (8 tortillas; 8 inch)
1
cup shredded lettuce
1/2
cup shredded Monterey Jack cheese (2 oz)
  • 1 Mix beans, salsa and chili powder in 1-quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm.
  • 2 Spoon about 1/4 cup of the bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with additional salsa if desired.

Expert Tips

Traditional refried beans are prepared very much like their name suggests. Cooked beans are mashed and fried, often in lard. Check your grocery aisle for equally tasty refried beans that are fried in vegetable oil if you're concerned about saturated fats.

If you like your tacos "loaded," then load these up, too! Chopped or sliced jalapeños, sliced ripe or green olives, chopped tomato or chopped bell pepper will bulk them up in colorful, delicious style!

These turned out great. I changed things up a little, skipping the lettuce (I'm not much of a lettuce fan), used cheddar cheese instead of Monterey Jack, and I added sour cream, spreading in on top of the filling before I added the cheese. I also popped them in the oven for a couple of minutes because I like my tortillas a little more crisp. Very good! I think I would like to add a little something else to the filling to give it a little more oomph, but overall these were still great, and VERY easy and quick to fix.

To make this recipe even healthier try using fat free refried beans. I like the ones with green chilies. I also use fat free sour cream, a little low fat cheese, and some type of healthy wrap instead of flour. Yummy.
