Gluten Free Mushroom Pecan Appetizers

Ingredients

tablespoons butter
1
package (8 oz) sliced fresh mushrooms (about 3 cups)
1
cup chopped onions (2 medium)
2
cups shredded Swiss cheese (8 oz)
1
cup chopped pecans, toasted
1
box (9 oz) Green Giant® frozen chopped spinach, thawed, squeezed to drain

eggs
1 1/3
cups milk
3/4
cup Bisquick® Gluten Free mix
1
teaspoon salt
1
teaspoon garlic powder

Directions

  • 1 Heat oven to 400°F. Spray 13x9-inch pan with cooking spray. In 10-inch skillet, melt butter over medium heat. Add mushrooms and onions; cook about 5 minutes, stirring occasionally, until onion is tender. Drain.
  • 2 In pan, mix mushroom mixture, cheese, pecans and spinach; spread evenly. In medium bowl, stir all remaining ingredients with whisk or fork until blended. Pour into pan.
  • 3 Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 30 minutes before serving.

Place the thawed spinach between several layers of paper towels. Then roll and squeeze the paper towels to remove excess moisture from the spinach.

I was wondering what type of cheese can be substituted for goats cheese and Romano cheese, if I cannot find it made from cows milk?

Just curious, has anyone tried this without the nuts (for those allergic)? This looks really good, I suppose for a get together you could make one with and without nuts.

I was pleasantly suprised at how easy the recipe was and how good it tastes. I wasn't sure people would try this at our office get together but they enjoyed it too! I didn't know gluten free could taste so good!
