I couldn't find butterscotch chips that are GF so I substituted with white chocolate chips. I found that the last 30 minutes was a little bit too long.. I'll probably bake for only 20 minutes the second half next time. Excellent treat!!

Fabulous cookie bars...reminded me of Magic 7 Layer bar bars...but, if you have celiac switch out the butterscotch chips for peanut butter morsels! Most butterscotch chips have gluten in them. You can't even tell they are GF!!!!

for Smartkooky: if you can handle gluten, graham crackers work well as a substitute. I can't wait to try these, I loved the 'seven layer bar' or 'dream bar' as I knew them previously.
