Easy Grasshopper Bars (Gluten Free)

box Betty Crocker® Gluten Free devil's food cake mix
1/3
cup vegetable oil
2
tablespoons water
1
egg
Frosting
1
container Betty Crocker® Rich & Creamy cream cheese frosting
1/4
teaspoon mint extract
3
to 4 drops green food color
Glaze
1
oz unsweetened baking chocolate
1
tablespoon butter
  • 1 Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir bar ingredients until soft dough forms. Press dough in bottom of pan. Bake 15 minutes. Cool about 10 minutes.
  • 2 In frosting container, stir in mint extract and food color. Spread over bars.
  • 3 In small microwavable bowl, microwave glaze ingredients uncovered on High 30 seconds; stir until smooth. Drizzle over frosting. Refrigerate 30 minutes or until set. For bars, cut into 6 rows by 6 rows.

    I have made these a few times, I'm not a huge grasshopper flavor fan. I loved these! I made them for a large party because I wanted to be able to eat something there, people didn't even know they were gluten free.

    I used whipped cream cheese frosting, and I added just a tad more mint extract than listed. Everyone loved them! They freeze great as well. I pull them from the freezer in the a.m., and add them to the kids' lunch boxes.

    I made this recipe for a co-worker's birthday. Instead of making bars I just made the regular cake. It turned out spectacular! It was so good I made it again for my family at home. Everyone raved over the flavor of the frosting.
