hard-cooked eggs, peeled

tablespoons mayonnaise or salad dressing
1/2
teaspoon ground mustard
1/8
teaspoon salt
1/8
teaspoon pepper
  • 1 Cut eggs lengthwise in half. Slip out yolks and mash with fork.
  • 2 Stir in mayonnaise, mustard, salt and pepper. Fill whites with egg yolk mixture, heaping it lightly. Cover and refrigerate up to 24 hours.

Expert Tips

Garnish deviled eggs with red caviar and Italian parsley, or top with thin slices of red pearl onions.

Cut a very thin slice off the bottom of each egg white before filling to help the eggs stay in place on the serving plate.

    This has always been a favorite of mine. I improvise on it a bit. Instead of the dry mustard I use regular yellow mustard and I also add 2 tbsp of picklerelish to it. Everyone I have ever served it to has wanted the recipe and has really injoyed them.

    These are good - but prefer BHG's original recipe: 6 eggs, 1/4 cup Mayo OR Miracle Whip (your preference but I use MW), 1 teas Vinegar (cuts the sweetness of MW), 1 teas prepared mustard - sprinkle with paprika JUST BEFORE serving (or it gets watery/runny & ruins your presentation).
