box Betty Crocker® Gluten Free yellow cake mix

cup mashed very ripe bananas (2 medium)
1/2
cup butter, softened

cup chopped nuts, if desired
  • 1 Heat oven to 350°F. Grease bottom only of 9x5-inch or 8x4-inch loaf pan with shortening.
  • 2 In large bowl, beat cake mix, mashed bananas, butter and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • 3 Bake 9-inch loaf 55 to 60 minutes, 8-inch loaf 1 hour 5 minutes to 1 hour 15 minutes, or until toothpick inserted in center comes out clean. (Place sheet of foil over loaf to prevent overbrowning.) Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool about 1 hour before slicing.

Oh My! This was a great recipe and very easy. Everyone loved! Cut a few slices a couple days later and had banana bread french toast with a couple strawberries and whipped topping on top! It was fabulous! It's a recipe you have to try!

I made this as a treat for the gluten free teachers at school. I tried a piece as I cut it and was very pleased! You can't even tell the difference! I will probably add another banana for moisture and a little vanilla next time, but I will definitely make it again!

I'm the one that is Gluten sensitive, but my hubby winds up eating most of it before I can. I always add extra banana to anything calling for it. Maybe an extra 1/4-1/2 depending on the banana.
