cups Original Bisquick® mix

cup milk

teaspoons caraway seed

lb sliced deli corned beef
1/4
cup deli-style mustard
3/4
cup shredded Swiss cheese (6 oz)

can (14 oz) sauerkraut, well drained
1/2
cup Thousand Island dressing
  • 1 Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • 2 In medium bowl, stir Bisquick mix, milk, egg and 1 teaspoon of the caraway seed with fork until blended. Spread 1 cup batter in baking dish.
  • 3 Brush corned beef slices with mustard; layer on top of batter in baking dish. Top evenly with cheese and sauerkraut. Carefully spread remaining batter over sauerkraut. Sprinkle with remaining 1 teaspoon caraway seed.
  • 4 Bake uncovered 28 to 32 minutes or until light golden brown and center is set. Let stand 5 minutes before cutting. Serve with Thousand Island dressing.

We love reubens and I found this to be a very satisfying and "lighter" choice without the buttered grilled bread. I used a mix of leftover corned beef and deli turkey pastrami. I think someone got into the pastrami before I made it, so the meat was a little on the low side. I cut back slightly on the mustard as I do in all recipes as it can be too overpowering for me. Will definitely make this again.

My husband smiled and said, 'this one is a keeper'! Deli corned beef is not available where we live, so I used thin slices of tinned corn beef and it worked very well. Forgot to make the thousand island dressing...maybe next time.

Doubled the recipe and baked the Reuben in a 12-inch cast iron Dutch oven on a camping trip. Wow! Cut it into wedges, served it with potato salad and fed ten hungry adults.
