Ingredients

oz feta cheese, cut into 1/2-inch cubes

cloves garlic, finely chopped
1/4
cup sun-dried tomatoes packed in oil, drained, chopped

tablespoons chopped fresh basil leaves

tablespoons chopped fresh parsley leaves
1/4
teaspoon salt
1/8
teaspoon black pepper
1/3
cup olive oil
Food Should Taste Good™ tomato & basil brown rice crackers, as desired

    Place feta cubes in small shallow dish. In small bowl, mix garlic, tomatoes, basil, parsley, salt and pepper. Stir in olive oil. Pour oil mixture over cheese. Marinate 2 hours in refrigerator, stirring occasionally.

    Transfer mixture to shallow serving bowl; serve with crackers.

Expert Tips

  • Slicing the feta cheese while it is cold makes for a much easier task!
  • This recipe can be made ahead, then covered and refrigerated overnight. Remove from refrigerator about 1 hour before serving.
