This might seem like a classic pancake recipe, but mind you, it's actually the ultimate! What makes this recipe so good? A few tablespoons of sugar and splash of vanilla add the perfect amount of sweetness, but not too much, so you can still pour maple syrup over these fluffy hot cakes.     Brush griddle or skillet with vegetable oil, or spray with cooking spray. Heat griddle to 350°F, or heat skillet over medium-low heat.

    In medium bowl, stir all ingredients with whisk or fork until blended.

    For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook about 30 seconds or until edges are dry. Turn; cook other side until golden brown.
