S'more Shortcake Pops

Ingredients

cups Original Bisquick® mix
2/3
cup milk
3
tablespoons sugar
3
tablespoons butter or margarine, melted
1 1/2
cups marshmallow creme
2
cups milk chocolate chips (12 oz)
1
teaspoon shortening
36
craft sticks (flat wooden sticks with rounded ends)
2
tablespoons graham cracker crumbs

Directions

  • 1 Heat oven to 425°F. To measure Bisquick mix, lightly spoon into measuring cup; level off. In medium bowl, stir Bisquick, milk, sugar and butter until soft dough forms. Drop by 6 spoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Remove from cookie sheet to cooling rack. Cool completely; about 20 minutes.
  • 2 With fingers, crumble shortcake into large bowl. Add marshmallow creme; mix well with spoon, pressing with back of spoon if necessary, until dough forms. Form dough into 36 1-inch balls (mixture will be a little sticky). Place on cookie sheet. Insert craft sticks into shortcake balls but do not poke all the way through other side.* Gently squeeze shortcake balls around craft sticks. Freeze 15 minutes.
  • 3 In small microwavable bowl, melt chips and shortening uncovered as directed on package of chips. Stir until smooth. When dipping shortcake balls, work with 5 to 10 at a time, keeping the rest in the freezer. Gently dip each shortcake ball two-thirds into chocolate mixture; allowing excess chocolate to drip back into bowl. Sprinkle balls with small amount of graham cracker crumbs. Repeat with remaining shortcake balls and melted chocolate mixture. Place in white or green polystyrene foam to allow chocolate to harden. Once chocolate is hardened, eat immediately or store covered in refrigerator. If refrigerated, uncover and allow shortcake pops to stand at room temperature 15 minutes before serving.

I tried using the craft sticks w/the rounded ends as the recipe suggested but, found that using 4in (10cm) lollipop/candy sticks were a little easier. Also, I placed the form dough balls in the freezer for 30 min vs. the 15 min suggested in step 2 because dipping the balls into the melted choc mixture isn't as easy as it sounds-choc mixture was very thick so I had to continously keep reheating the choc mixture. Since I didn't have any polystyreme foam, I ended up putting holes into 2 paper plates and placed the plates on the rim of 2 mixing bowls (deep enough so the sticks do not touch the bottom of bowl). After the balls were dipped into the melted choc mixture & graham cracker crumbs were sprinkled, I inserted the sticks into those holes on the plate & placed the plates in the refrig. for 15 min until the choc was hard. My family and friends all enjoyed these S'more Shortcake Pops.
