cup butter or margarine, melted

tablespoons Dijon mustard

cup Progresso® dry bread crumbs (any flavor)

cup grated Parmesan cheese

boneless skinless chicken breast halves (1 3/4 pounds)
  • 1 Heat oven to 375ºF. Mix butter and mustard in shallow dish until well mixed. Mix bread crumbs and cheese in large plastic bag.
  • 2 Dip one piece of chicken at a time into butter mixture, coating all sides. Then place in bag of bread crumbs, seal bag and shake to coat with crumb mixture. Place chicken in single layer in ungreased rectangular pan, 13x9x2 inches.
  • 3 Bake uncovered 20 to 30 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.

Expert Tips

Go ahead and add a pinch of this or a dash of that. Try adding dried basil, thyme, sage or rosemary leaves, dried dill weed or seasoned salt to taste to the bread crumb mixture.

Super yummy!!!! Pretty easy to make. I have made this before with smaller chunks of chicken and it was a hassle to get all the pieces coated. Using bigger pieces makes it way easier to make. The chicken comes out super tender and juicy and it is good reheated also. My family loves it!!!

I made this tonight. The picture looks like it turns out crspy. Mine was anything but crispy! I followed the recipe except I put parchment paper in the pan. Can that affect the "crispiness" of the chicken? The taste was ok but it didn't look at all like the picture. At this point I wouldn't make it again.
