Sugared Almonds

cup sliced almonds

teaspoons sugar
Sweet-Sour Dressing

cup vegetable oil

tablespoons sugar

tablespoons white or cider vinegar

tablespoon chopped fresh parsley

teaspoon salt
Dash pepper
Dash red pepper sauce
Salad
1/2
small head lettuce, torn into bite-size pieces (3 cups)
1/2
bunch romaine lettuce, torn into bite-size pieces (3 cups)

medium celery stalks, chopped (1 cup)

medium green onions, thinly sliced (2 tablespoons)

can (11 oz) mandarin orange segments, drained
  • 1 In 1-quart saucepan, cook almonds and 4 teaspoons sugar over low heat about 10 minutes, stirring constantly, until sugar is melted and almonds are coated; cool and break apart.
  • 2 In tightly covered container, shake all dressing ingredients. Refrigerate until serving time.
  • 3 In large bowl, toss salad ingredients, dressing and almonds. Serve immediately.

This salad tasted amazing. I really loved the dressing and it was perfect for summer. My only trouble was making the sugared almond slivers. I ended up with a big burnt mess and the sugar never melted. I stirred the whole time without stopping. Any suggestions?

Everyone loved it, even the kids. I made the salad for a potluck dinner and within a short time, it was gone! I'll be sure to make a double batch for my next gathering. It is an eye-pleasing presentation and pleasantly refreshing.

I have made this salad for years and it always gets rave reviews, even from my mother, the critic. What I like best about it is you can prepare each part well in advance of serving it and store it until ready to serve. I store the torn greens in a large zip lock and use that to toss the ingredients when ready to serve.
