lb lean (at least 80%) ground beef

can (14.5 oz) whole tomatoes, drained, cut up
1
medium onion, chopped (1/2 cup)
1
package (1 oz) chili seasoning mix
1
can (2 1/4 oz) sliced ripe olives, drained
1
cup shredded Cheddar cheese (4 oz)
1/2
cup Original Bisquick® mix
1
cup milk
2
eggs
Sour cream, if desired
Shredded lettuce, if desired
Chopped tomatoes, if desired
  • 1 Heat oven to 400°F. Spray 9-inch pie plate with cooking spray. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in cut-up tomatoes, onion and chili seasoning mix. Spread in pie plate. Sprinkle with olives and cheese.
  • 2 In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into pie plate.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve with sour cream, lettuce and chopped tomatoes.

This was Delish!! I took the advise of one of the above and spread a thick layer of refried beans on the bottom of the pan first and I also used salsa instead of tomatoes and onions. It was a big hit and I will definitely make it again! (oh, and use extra cheese too!!-I used a mexican mix)

Made this twice. Seems the quantities for the Bisquick and the Milk are reversed. 1 Cup of Bisquick and 1/2 Cup of Milk works better and conforms to the instructions on the Bisquick box. When I used the quantities in the recipe it overflowed the pan and did not form a crust on the bottom or sides.

I only gave this four spoons because it was on the bland side for my and my bf's tastes. The kiddos ate it up though! (Except for the 7 year old whom, by the way, is extremely picky. I think she was expecting a sweet, fruity pie! lol. She DID have fun making it with me though!). Next time I might sub salsa in for the tomatoe and onion or sprinkle in some red pepper flakes. Nice change from Hamburger Helper.
