Impossibly Easy Chili Pie

Ingredients

1
lb lean (at least 80%) ground beef
1
can (14.5 oz) whole tomatoes, drained, cut up
1
medium onion, chopped (1/2 cup)
1
package (1 oz) chili seasoning mix
1
can (2 1/4 oz) sliced ripe olives, drained
1
cup shredded Cheddar cheese (4 oz)
1/2
cup Original Bisquick® mix
1
cup milk
2
eggs
Sour cream, if desired
Shredded lettuce, if desired
Chopped tomatoes, if desired

Directions

  • 1 Heat oven to 400°F. Spray 9-inch pie plate with cooking spray. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in cut-up tomatoes, onion and chili seasoning mix. Spread in pie plate. Sprinkle with olives and cheese.
  • 2 In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into pie plate.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve with sour cream, lettuce and chopped tomatoes.

Use shredded reduced-fat Cheddar cheese, Bisquick Heart Smart® mix and fat-free (skim) milk. Substitute 3 egg whites or 1/2 cup fat-free egg product for the eggs. Serve with reduced-fat sour cream.

This is really good but is much better if you spice up the bisquick with something like garlic, old bay, etc. (unless you like it or have to have it bland). Also you have to play with the bisquick a little bit if using chili. Most people make chili more like soup. If you do this then you need more bisquick to get the same results or cook it a lot longer. If this is your case wait to add the cheese or it will burn. I've been playing with these impossible pie receipes for over 25 yrs. Most are tested with items that have moisture instead of actual liquid. But they're alot of fun, easy to make & just different enough to make leftovers taste good.

This was Delish!! I took the advise of one of the above and spread a thick layer of refried beans on the bottom of the pan first and I also used salsa instead of tomatoes and onions. It was a big hit and I will definitely make it again! (oh, and use extra cheese too!!-I used a mexican mix)

Made this twice. Seems the quantities for the Bisquick and the Milk are reversed. 1 Cup of Bisquick and 1/2 Cup of Milk works better and conforms to the instructions on the Bisquick box. When I used the quantities in the recipe it overflowed the pan and did not form a crust on the bottom or sides.
