I have used impossible pie/casserole recipes for many years and still do, but I cannot use my favorite recipes when my son is here (holiday time, family staying) because he cannot eat cheese, especially flavorful ones like parmesan or cheddar. He is ok with cream cheese, plain yogurt, and sour cream, though,and I wonder if I can substitute, and if so, proportions? Would a thick béchamel be an acceptable substitute? Since this is holiday time and I enjoy the convenience of the "impossible" or "impossibly" recipes, I wish I knew what to do. Can you help?

JERZGIRL have u tried googling impossible pie with cucumbers and tomatoes? It just might find it for you. In fact it sounds good so I am going to do it now. GL hun.

Back in the 80s, there was an "Impossible" pie recipe that included sliced cucumbers and tomatoes. My step-kids loved it, but I have not been able to find it. Does anyone have this in their files or does Betty have this in her archives?
