slices bacon, crisply cooked, crumbled

cup shredded Swiss cheese (4 oz)

cup chopped onion

cup Original Bisquick® mix

  • 1 Heat oven to 400°F. Grease 9-inch glass pie plate. Sprinkle bacon, cheese and onion into pie plate.
  • 2 In medium bowl, beat remaining ingredients until blended; pour into pie plate.
  • 3 Bake 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

Expert Tips

This pie is impossibly easy because there is no crust to roll out. The crust forms as the pie bakes.

Chop 3 green onions to use instead of the chopped yellow onion.

You're frying anyway, so why not fry a double batch of bacon and store the extra in your freezer? Having fried bacon on hand is great for sandwiches, seasoning vegetables and making Impossibly Easy Bacon Pie even easier.

If you're lucky enough to have leftovers, reheat them in the microwave oven. Cover with waxed paper and microwave 1 slice on a microwaveable plate on Medium (50%) for 2 to 3 minutes or until hot.

My family loves this recipe! Very easy to make. I substitute the bacon for sausage (1/2 a roll of bulk sausage,cooked and drained) and use cheddar chesse.

I've made this recipe several times for family get-togethers, and breakfast at work. I always get lots of compliments and asked for the recipe. If you don't have swiss cheese substitute cheddar or another favorite. To make it even easier, I use the precooked bacon sold in grocery stores. Just follow the directions on the package to make it crispy and then crumble or cut up. When making larger quantitites, I've doubled the recipe and put it in a 13 X 9 pan. I usually add a couple extra eggs to the 4 (8 if doubled) eggs in the recipe. Be careful not to add to many eggs as it can come out drier. If you don't like onions, they are easily omitted. You can also use other types of already cooked meats in place of the bacon. Look for other Impossibly easy pies on the Betty Crocker site. There's a lot ot choose from!
