Hot Pretzel Bites

Ingredients

package dry active yeast
1 1/2
cup warm water
1
tablespoon granulated sugar
4
cups all purpose flour
1/2
teaspoon salt
1
large egg
Coarse salt
1
tablespoon unsalted butter

  • 1 Preheat oven to 425°F degrees. Line a baking sheet with parchment paper.
  • 2 In a large bowl, combine the yeast and warm water. Let sit until the yeast dissolves (about 2-3 minutes).
  • 3 Stir the sugar into the yeast mixture until dissolved.
  • 4 Add the flour and salt. Stir to combine. The dough will be crumbly. Turn the dough out onto a floured board and knead with floured hands until smooth.
  • 5 In a small bowl, lightly beat the egg. Set aside.
  • 6 Divide the dough into 5 portions. Working with one at a time, roll the dough balls out into ropes that are about 1 inch in diameter. Use a sharp knife to cut 1-inch lengths of dough.
  • 7 Drop each of the dough pieces into the egg mixture and immediately transfer to the prepared baking sheet. Place them about 1/2 inch apart. Sprinkle with coarse salt.
  • 8 Slide the tray into the oven and bake for 8-10 minutes, until golden brown. Repeat the process until all the dough has been cooked.
  • 9 Melt the butter and brush all the pretzel bites with butter, then sprinkle with more salt.

Very good & very easy! I'm always leery about recipes with yeast, since I was scarred at an early age. :-} This tastes great. Also, terrific advice on the "Baking soda bath" prior to brushing egg/salt sprinkle. Most impressive. Thanks. :-D

Tried them twice. Had to subsitute for the flour on the first batch and didn't do the soda bath. very dinner roll like, but good. Just made the secnd batch with flour and the soda bath and they are amazingly good!!

To make these taste more for like pretzels, poach them in a baking soda bath before brushing them (not dunking them in!) with egg. 2 quarts boiling water to 1/4 cup baking soda. Don't pour the baking soda in all at once! Boil bites for 30 seconds a side, brush with egg and sprinkle with salt, then bake.
