box (1 lb 2.3 oz) Betty Crocker® fudge brownie mix

cups Fiber One® original bran cereal
1/3
cup water

egg

tablespoon vegetable oil
2
teaspoons vanilla
1/8
teaspoon ground cinnamon

tablespoons miniature semisweet chocolate chips
  • 1 Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, mix ingredients with spoon. Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheets.
  • 2 Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store in tightly covered container.

I followed the recipe exactly and got a below-average cookie. It comes out nice and chewy but 2 Tablespoons of chocolate chips is not enough. To be honest, I would have been happier using the brownie mix to make a pan of standard brownies. This is good if you have some Fiber One cereal you don't know what to do with, but I won't make them again.

These are pretty darn good! I was surprised. My first attempt at a "healthy" cookie. Very nice chocolate flavor. I followed another reviewers suggestion and used the espresso powder instead of cinnamon. I put the cereal in my blender so it was more like a flour. MUST use parchment- I never bake without it anyway. Dough was very heavy and sticky. I would use my kitchen aid mixer next time ( and there will be many next times) just to make sure it all gets blended in. I thought they were very quick and easy to make. Thank you for the recipe!
