small green bell pepper, chopped (1/2 cup)

ounces fresh mushrooms, sliced (3 ounces)

cup Gold Medal® all-purpose flour

cups milk

cups Progresso® chicken broth (from 32-ounce carton)

cups cut-up cooked chicken or turkey
1
jar (2 ounces) diced pimientos, drained

cups hot cooked rice
  • 1 Melt butter in 3-quart saucepan over medium-high heat. Cook bell pepper and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.
  • 2 Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until bubbly; remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken and pimientos; cook until hot. Serve over rice.

Expert Tips

You can use a 4-ounce can of mushroom pieces and stems, drained, instead of the fresh mushrooms. Add the mushroom liquid with the milk in step 2 for a mightier mushroom flavor.

Why not turn to tuna? Tuna à la King is as easy as replacing the chicken with a 12 1/2-ounce can of drained tuna.

Make your chicken fit for a king! Serve it over toasted bread triangles, as shown, instead of rice.

i still love the old fashion recipe without the bell peppers but instead of toast or muffins i serve the sauce over garlic texas toast... can't go wrong with garlic =-)

I love this recipe, but we never put in green peppers--too strong. I always use a little dry sherry in the sauce and add peas. If I have any, I add shallots in with the mushrooms to saute. My mother served this dish about once a week. Now I go to Sam's club and buy one of their wonderful cooked chickens and half the work is done already. Boil the bones after stripping the meat and you have your broth--and better then canned.

This is my favorite BC recipe. I don't use green peppers but use roasted red peppers. Serve over toasted bread. Easy and fantastic. You really must try this recipe.
