These cheesy sandwich wedges offer a new dimension to plain ol’ grilled cheese sandwiches!
tablespoons butter or margarine
medium onions, sliced
slices (1 ounce each) provolone or Colby-Monterey Jack cheese
round focaccia bread (10 to 12 inches in diameter), cut horizontally in half
Melt butter in 10-inch skillet over medium-low heat. Cook onions in butter 15 to 20 minutes, stirring occasionally, until onions are brown and caramelized; remove from heat.
Heat oven to 350ºF. Place half of the cheese on bottom half of focaccia. Top with onions and remaining cheese. Replace top of focaccia. Wrap tightly in aluminum foil. Bake 15 to 20 minutes or until cheese is melted. Cool 5 minutes. Cut into wedges.
Because caramelizing brings out the natural sweetness of the onions, there’s no need to pay extra for specialty sweet onions. Standard yellow onions will do the trick!
Perk up these party-friendly appetizers by adding canned (drained) chopped green chilies.
