Onion and Bacon Cheese Sandwiches

slices bacon, cut into 1/2-inch pieces

medium onion, thinly sliced

slices (3/4 oz each) Cheddar cheese

slices Vienna bread, 1/2 inch thick

  • 1 In 12-inch nonstick skillet, cook bacon over medium heat about 4 minutes, stirring occasionally, until almost cooked. Add onion. Cook 2 to 3 minutes, turning occasionally, until tender. Remove bacon and onion from skillet. Reserve 1 tablespoon drippings in skillet.
  • 2 To make each sandwich, layer cheese, bacon and onion between 2 bread slices. Place 2 sandwiches in drippings in skillet. Cover and cook over medium-low heat 3 to 5 minutes, turning once, until bread is crisp and golden brown and cheese is melted. Repeat with remaining sandwiches.

I've been eating these for 40 years. My girl friend in High School would make them for us. I chop the onions very small since my hubby does not like the onion on his. I like to slip just a few on all of them. It just doesn't taste the same without the onions. I've always cooked mine in the broiler oven though. I may try to cook in skillet.

Absolutely wonderful recipe. I didn't have any of the items on hand so I used what I did have. Russian rye bread, pepper bacon, red onion and Havarti cheese. My company raved about the sandwiches. Can't wait to make it with other breads and cheeses. Thank you for a great recipe.
