cups Fiber One® Honey Clusters® cereal

cup canola or vegetable oil

cup buttermilk

teaspoons vanilla

cup mashed very ripe bananas (2 medium)

cups Gold Medal® all-purpose flour

teaspoon baking soda

teaspoon salt
  • 1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • 2 In large bowl, beat sugar and oil with electric mixer on medium speed until well mixed. On low speed, beat in buttermilk, vanilla and egg until smooth. Beat in bananas. Beat in flour, baking soda and salt until will blended.
  • 3 Stir in cereal just until mixed. Spread in pan.
  • 4 Bake 1 hour 10 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 2 hours, before slicing.

Expert Tips

Grease only the bottoms of loaf pans for quick breads. Ungreased sides allow the batter to cling while rising during baking, which helps form a gently rounded top. If sides are greased, the edges of the loaf may have ridges.

This bread was outstanding! Delicious and moist. I used three VERY ripe bananas and baked it for 60 minutes. I would be very careful with the amount of time you allow this bread to bake, I think it could overbake easily.

A good banana bread! I would make this recipe again. The best part is the cereal - I buy that to make another great recipe on this site (Apple Honey Breakfast Bars) but am not a huge fan of eating it as cereal - this was a great way to use most of the rest of it.
