lb lean (at least 80%) ground beef

large onion, chopped (about 1 cup)

tablespoons all-purpose flour

can (14.5 oz) diced tomatoes, undrained

cup shredded Cheddar cheese (4 oz)

cups frozen crispy French-fried potatoes (from 20-oz bag)
  • 1 Heat oven to 450°F. In 12-inch nonstick skillet, cook beef and onion over medium-high heat about 8 minutes, stirring occasionally, until beef is thoroughly cooked; drain well. Sprinkle flour over beef mixture. Cook 1 minute, stirring constantly. Stir in tomatoes; heat to boiling. Remove from heat.
  • 2 In ungreased 1 1/2-quart casserole, spread beef mixture. Sprinkle with cheese. Arrange frozen potatoes evenly in single layer on top.
  • 3 Bake uncovered about 20 minutes or until potatoes are golden brown. Let stand 5 minutes before serving.

Made this with Turkey Burger for dinner night before last, and it was a HUGE hit! There weren't any leftovers! My daughter, who doesn't eat alot of meat, said that this was VERY GOOD! Think this will become one of our staple dinner recipes.

Tried this recipe last night; not bad, but a bit on the bland side. Hubby added some garlic to his serving & that helped a bit; I added some ketchup to mine & that made a BIG difference! I'm not tossing the recipe just yet, but I will definitely be tweaking it next time--adding some minced garlic to the meat mixture, & probably a layer of either ketchup or tomato sauce (maybe even Hunt's meatloaf sauce?) before putting on the cheese & fries. Oh, & deer burger makes for a good & lean substitute for the ground beef!

I made this for my daughter and husband(hamberger and french fry lovers). I added Ketchup and Mustard with the tomatoes for more flavor. When it was done cooking i tilted the dish and soaked up access water with a napkin. We enjoyed this and will make again-a real easy fast dinner for after work
