Bananas Foster French Toast

French toast gets a tasty twist with the addition of bananas, rum extract and pecans. The use of cinnamon bread is ideal!

slices cinnamon bread, cut into 1/2-inch cubes (about 8 cups)

cup milk

cups real maple syrup

teaspoon rum extract

ripe bananas, cut into 1/2-inch slices

cup chopped pecans
  • 1 Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Arrange bread cubes in baking dish. In large bowl, beat eggs, milk and 1/2 cup of the maple syrup with wire whisk. Pour over bread in baking dish. Cover and refrigerate 8 hours or overnight.
  • 2 Heat oven to 350°F. Uncover; bake 35 to 40 minutes or until golden brown along edges. Let stand 7 to 10 minutes before serving.
  • 3 Meanwhile, in medium microwavable bowl, microwave remaining 2 cups maple syrup uncovered on High 1 to 2 minutes, stirring every 30 seconds, until warm. Stir in rum extract.
  • 4 Sprinkle banana slices and pecans evenly over bread; drizzle with 1 cup of the warmed syrup mixture. Serve immediately with remaining syrup.

Very easy to make and had very good flavor, though we thought it average for french toast and not particularly outstanding thus the 3 spoon rating. It didn't remind me of Bananas Foster though, especially with merely being topped by uncooked bananas. I used honey oat bread and added spices; mixed in the bananas and topped it with the pecans just before baking. If I make it again, I'd add vanilla to the egg mixture. As far as it's comparison to bread pudding, while this recipe [and most other baked french toast recipes] is similar it certainly isn't the same. Bread pudding has lots more liquid compared to bread so that it cooks into a thick creamy mass. These overnight fench toast recipes are definitely more bread and not nearly as creamy as bread pudding.

I did them in Europe 180ºC 20 minutes. Normal white bread and just prinkle cinnamon before fridge. Awesome.
