Slow-Cooker Pulled Pork with Chipotle, Honey and Lime

Chipotle chiles in adobo sauce, honey and lime come together to make a flavorful sauce for shredded slow-cooker pork.

Ingredients

cup water

medium onions, quartered

boneless pork shoulder roast (3 lb)
1 1/2
teaspoons salt
1 1/2
teaspoons pepper
2
canned chipotle chiles in adobo sauce, chopped
1/2
cup ketchup
3
tablespoons lime juice
2
tablespoons Worcestershire sauce
2
tablespoons honey
2
tablespoons butter, melted
1
teaspoon ground coriander

Directions

  • 1 Place water and onions in slow cooker. Sprinkle pork with salt, pepper and half of the chopped chiles; add pork to slow cooker.
  • 2 Cover; cook on Low heat setting 6 to 8 hours.
  • 3 Remove pork and onions from slow cooker to large plate or cutting board; cool slightly. Discard cooking juices. Shred pork with 2 forks; discard fat. Return pork and onions to slow cooker.
  • 4 In small bowl, mix remaining half of chiles, the ketchup, lime juice, Worcestershire sauce, honey, butter and coriander. Stir into pork mixture.
  • 5 Cover; cook on Low heat setting 1 hour.
  • 6 Serve on Jalapeño-Cotija Skillet Cornbread.

Expert Tips

Wear disposable gloves when cutting hot chiles; the oil can burn skin. Avoid touching your face.
