package (1 pound 4 ounces) bone-in skinless chicken thighs
1/4
cup fresh lime juice (2 limes)
1 1/2
cups Progresso® chicken broth (from 32-ounce carton)
2
cloves garlic, finely chopped
1/2
teaspoon dried thyme leaves
1/4
teaspoon pepper
2
tablespoons butter or margarine
1
cup uncooked instant rice
Chopped fresh parsley, if desired
  • 1 Place chicken in 3- to 4-quart slow cooker. Add remaining ingredients except rice and parsley.
  • 2 Cover and cook on Low heat setting 8 to 10 hours. During last 15 minutes of cooking, stir in rice.
  • 3 Remove chicken from cooker. Place cooked rice on each serving plate. Top with chicken. Spoon any remaining juices over chicken. Garnish with parsley.

Expert Tips

Bone-in chicken works best in slow cookers. The bones help keep the chicken in one piece during the long cooking time.

Serve with a tossed green salad or steamed fresh vegetables.

Garnish with fanned lime slices.

The texture of the chicken was good. (I used boneless thighs.) The rice was soupy. The flavor was a little blah for me.

YUMMMM!! I used chicken breast instead of thighs, I actually liked that it fell apart into somewhat shredded texture. Everyone loved it. It was light, yet filling. However, next time, I will probably double it. Didn't really get 6 servings out of it. And a little more flavor to the chicken wouldn't hurt, but the fall apart texture of the chicken went well with the flavorful rice getting spoonfuls of chicken and rice!

This was a thumbs down from my family. The chicken had no flavor - it tasted boiled. I didn't even want to think about how I could change up the recipe to make it better. Won't cook this again.
