Pork with Apple and Parsnips

Mustard and allspice flavor this hearty dish of pork chops, parsnips, onions and sliced apples all cooked in the same pan!

pork loin or rib chops, about 1/2 inch thick (1 pound)

medium parsnips, cut crosswise into 1/2-inch slices

medium onion, sliced

cup Progresso® chicken broth (from 32-ounce carton)

teaspoon ground mustard
1/4
teaspoon salt
1/4
teaspoon ground allspice
1/8
teaspoon pepper

medium apple, cut into 1/4-inch wedges

tablespoons chopped fresh parsley
  • 1 Trim fat from pork. Cook pork in 10-inch nonstick skillet over medium heat, turning once, until brown; drain.
  • 2 Place parsnips and onion on pork. Mix broth, mustard, salt, allspice and pepper; pour over vegetables and pork. Heat to boiling; reduce heat. Cover and simmer about 30 minutes or until pork chops are slightly pink when cut near bone.
  • 3 Arrange apple on vegetables. Cover and simmer about 3 minutes or just until apple is tender. Sprinkle with parsley.

Expert Tips

Make this dish lower in sodium by using reduced-sodium chicken broth.

Wonderful recipe! I loved the flavors ... I omitted the parsnips as I did not have them available, and added some red onion. mmmmmm, my husband says he loves it more than the Bacon-Wrapped Pork Tenderloin w/grapes recipe I make! & that's saying ALOT!

Parsnips are one of my favorite vegetables and this recipe really showcases their earthy sweetness! Once fall weather arrives, this is one of the first recipes I prepare from my fall & winter menus. A splash of balsamic vinegar is good in this too!

This was really really good. I rarely give 5's...if there were a 4.5, that's what I would rate this one. lol I think I may have cooked my apples a little too long though because they turned to mush. lol Didn't hurt the taste though. The flavors in this dish are such an interesting and delightful blend.
