box Betty Crocker® SuperMoist® yellow cake mix

cup packed brown sugar
1/2
cup butter or margarine, softened
1/2
cup shortening

tablespoons water
1 1/2
teaspoons ground cinnamon

egg

cups quick-cooking or old-fashioned oats
1
cup raisins or chopped dates
1/2
cup chopped nuts, if desired
  • 1 Heat oven to 375°F (350°F for dark or nonstick pans). In large bowl, beat cake mix, brown sugar, butter, shortening, water, cinnamon and egg with electric mixer on medium speed about 1 minute or until smooth. With spoon, stir in oats, raisins and nuts.
  • 2 Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheets; flatten dough slightly with fingers.
  • 3 Bake 9 to 12 minutes (centers will be soft). Cool 1 minute; remove from cookie sheets. Store covered.

Quick, easy and delicious. I plumped my raisins for a minute in the microwave with the 2 Tble. of water called for in the recipe. When they were slightly cool, I added to the dough. Worked great. When using a cookie scoop, I found I needed to cook 12-13 minutes. They only made 3-1/2 dozen. I found them a bit too sweet so next time I will use only 1/3 cup brown sugar.

These are the all time best oatmeal raisin cookies.Chocolate chips are great with the raisins as well. So easy to make!
