cup Gold Medal® all-purpose flour*
1/2
cup butter or margarine, softened
1/4
cup powdered sugar
1
cup granulated sugar
2
teaspoons grated lemon peel, if desired
2
tablespoons lemon juice
1/2
teaspoon baking powder
1/4
teaspoon salt
2
large eggs
Additional powdered sugar
  • 1 Heat oven to 350°F.
  • 2 In medium bowl, mix flour, butter and 1/4 cup powdered sugar with spoon. Press in ungreased 8-inch or 9-inch square pan, building up 1/2-inch edges. Bake crust 20 minutes; remove from oven.
  • 3 In medium bowl, beat remaining ingredients except additional powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.
  • 4 Bake 25 to 30 minutes or until no indentation remains when touched lightly in center. Cool completely in pan on wire rack, about 1 hour. Dust with powdered sugar. For bars, cut into 5 rows by 5 rows.

these look just like the pic they look delicious. i suggest using a square pan or else the crust gets funky. i bring these to parties all the time. this is the only thing my friends will let me bring. they love em!

I really wasn't too happy with this recipe. the crust is overly sweet. (and i like sweet) I did however use a 9in round pan, don't know if that's what made a big difference. they didn't look at all like the pic above. was a very thin layer inside and wasn't very lemony at all. wasn't bad, but you could really add a lot more lemon and maybe try a different crust.

Lemon Bars are my absoulute favorite food of all time, so when I made this recipe I thought It'd better be good- AND IT WAS. The crust was so flaky and buttery and the tart and sweet lemons really woke me up. Great, great, GREAT recipe.
