1: cup flaked or shredded coconut

3/4: cup sugar

1/2: cup Original Bisquick® mix

1/4: cup butter or margarine, softened

2: cups milk

1 1/2: teaspoons vanilla

4: eggs

Save $$$ on your favorite brands

1 Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
2 In medium bowl, stir all ingredients until blended. Pour into pie plate.
3 Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

I made this pie yesterday & I just loved it!! I'm not sure why all the reviewers said it was "eggy" or tasted like scrambled eggs, but mine tasted like coconut custard. Also, it was soooo easy. Next time, I might try putting all the ingredients in a blender, but I just followed the recipe as is & it was delicious. This is a definite keeper for me.

I have been making this pie since I was a teenager. I'm a huge fan of coconut and this is so easy and quick...it really seems impossible. Now everyone loves this...husband and children think I'm a hero for the few minutes it takes. There is nothing that compares to this wonderfully, custardy, coconutty, impossibly easy pie!
