1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup Original Bisquick® mix
1/2 cup sugar
1 cup evaporated milk
1 tablespoon butter or margarine, softened
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
2 eggs
Whipped topping, if desired
  1. Heat oven to 350ºF. Grease 9-inch pie plate.
  2. Stir all ingredients except whipped topping until blended. Pour into pie plate.
  3. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.
Make the Most of This Recipe
Health Twist
To lower the fat to just 4 grams and the calories to 170 per serving, use 1 1/2 cups of 1% milk for the evaporated milk and use reduced-calorie margarine.
Special Touch
For a festive presentation, sprinkle the plate with ground cinnamon. Top the pie with frozen (thawed) whipped topping and a cinnamon stick.
Substitution
If you don't have pumpkin pie spice on hand, use 1/2 teaspoon each of ground cinnamon, ground nutmeg and ground ginger.

I started making this pie when it first appeared on the Bisquick box many many years ago. I enjoy this pie all year round. Sometimes I get creative and add pumpkin pie spice cappuccino I make for me here at home to the pumpkin. Very faint taste of coffee but I like it. I know there has to be a million different pumpkin pies an adventurer can make with this recipe. Thank you Bisquick!!!

Seems I have been baking this easy, yummy pie forever. Now it is time to pass on the recipe and the simplicity of it to my 12 year old granddaughter. I know she will be very proud to share her Impossible Pumpkin Pie with her family.

I had made this recently, having found some canned pumpkin in my pantry. This is the second time I made it. First time I followed the recipe exactly and it was good. This time I added 1/2 tsp. cinnamon and 1 tsp. rum extract. Served with a dollop of whipped cream and a small drizzle of maple syrup over top it was even better this time.

My favorite part of pie is the crust, if done right. My family, however, are not fans of crust. This is the perfect blend of both, as I am not a pumpkin pie eater. Absolutely fabulous!!!

INCREDIBLE!! I have been making this pie for over 30 years! It's the only pumpkin pie I will make and the only one my family will eat!! The best part is ... no crust and it is SO easy and fast to make!! EVERYONE rants and raves about it! ENJOY!
