boneless skinless chicken breasts (about 1 1/4 lb)

tablespoon olive or vegetable oil

teaspoons Montreal chicken grill seasoning
1
tablespoon packed brown sugar
1/2
teaspoon chipotle chili pepper powder
1/3
cup mayonnaise or salad dressing
2
tablespoons lemon juice
2
teaspoons sugar
2
teaspoons cider vinegar
1/4
teaspoon pepper
  • 1 Heat gas or charcoal grill. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Brush all sides of chicken with oil. In small bowl, mix grill seasoning, brown sugar and chili pepper powder; sprinkle on both sides of chicken.
  • 2 Place chicken on grill over medium heat. Cover grill; cook 5 to 6 minutes, turning once, until chicken is no longer pink in center.
  • 3 Meanwhile, in small bowl, beat remaining ingredients with wire whisk until blended. Drizzle mayonnaise mixture on 4 serving plates. Top with chicken.

This recipe has great potential! I have altered it just a bit to make it suit our tastes and diet. The chicken seasoning is altered to: 1 Tablespoon & 1 teaspoon of montreal seasoning 2 tsp brown sugar 1 tsp crushed red pepper 1/4 tsp garlic powder 1/8 tsp salt We have an egg allergy in our home so we use vegenaise instead of mayo. here is our recipe for the sauce: 1/3 cup vegenaise (or mayo) 1/2 tsp apple cider vinegar 1/4 tsp pepper 1/8 tsp garlic powder 2 1/2 tsp lemon juice Thanks for the great recipe!!

By far the best chicken I have ever made. I really wasn't so sure of it, but wanted to try something new. I was blown away. It was voted favorite by my entire family of 5! So amazing, but I did grill it in my Nuwave oven rather than the grill.

A perfect balance between spicy and sweet. The chicken is good without the sauce, too. This reminded my family of good barbecued chicken without the mess!
