Looking for gluten-free appetizers? These adorable little Dutch babies are gluten-free...but they are so tasty, everyone will love them! From our Bisquick Quick to the Table cookbook, they only take 40 minutes to go from gathering the ingredients to devouring them! They're perfect for a holiday appetizer or are evergreen for any time of the year.

Ingredients

  • 1/2 cup water
  • 3 tablespoons butter
  • 3/4 cup Bisquick™ Gluten Free pancake & baking mix
  • 3 tablespoons chopped julienne-cut sun-dried tomatoes with herbs (from 8.5-oz jar)
  • 2 tablespoons chopped fresh basil leaves
  • 1/4 teaspoon salt
  • 3 eggs
  • 4 ounces fresh mozzarella cheese, cut into 1/2-inch cubes (from 8-oz package)

    Heat oven to 400°F. Generously spray 12 regular-size muffin cups with cooking spray.

    In 2-quart saucepan, heat water and butter to boiling. Add Bisquick Gluten Free mix, sun-dried tomatoes, 1 1/2 tablespoons of the basil and the salt. Vigorously stir over low heat about 1 minute or until mixture holds together. Remove from heat.

    With a spoon, beat in eggs, one at a time, beating until smooth and glossy after each addition. Spoon about 2 tablespoons batter into bottom of each muffin cup.

    Bake 15 to 18 minutes or until puffed and dry in the center. With back of measuring tablespoon, lightly press top of each cup to create a well. Divide mozzarella among cups. Bake 1 to 2 minutes or until cheese softens and begins to melt; sprinkle with remaining basil.

    Fresh mozzarella cheese is a semisoft cheese that has a high moisture content, so it melts quickly, which makes it perfect for this recipe. Look for it in the deli section of the grocery store. It is available in both balls and logs.
  • tip 2
    Rich-flavored, dense sun-dried tomatoes like the ones we use in this recipe come dry or packed in oil. We recommend patting them dry with paper towels after chopping to remove the excess oil. Sun-dried tomatoes may be found in several places in the grocery store. Look for them with the tomato products or near pickles and olives. You can always chop more and sprinkle on top after baking, if you like.
