Garlic Pork Marsala

Ingredients

  • 1 pork tenderloin (about 1 lb)
  • 1/4 cup finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh sage leaves or 1 teaspoon dried sage leaves, crushed
  • 1 tablespoon garlic-pepper blend
  • 1/2 teaspoon salt
  • 4 cloves garlic, finely chopped
  • 2 tablespoons olive oil
  • 1 package (8 oz) sliced fresh baby portabella mushrooms
  • 1/2 cup sweet or dry Marsala wine or chicken broth
  • Prepared Betty Crocker Butter or Four Cheese Mashed Potatoes, if desired
  • 2 teaspoons cornstarch

    Cut pork into 1/2-inch slices. In small bowl, stir chopped parsley, and sage, garlic-pepper, salt, garlic and 1 tablespoon of the olive oil; reserve 1 tablespoon of the mixture. Set aside. Rub remaining parsley mixture over both sides of pork slices.

    In 12-inch nonstick skillet, heat remaining 1 tablespoon olive oil over medium-high heat. Add pork; cook 5 to 7 minutes, turning once, until no longer pink in center. Remove pork from skillet to heatproof platter; cover with foil to keep warm.

    Add mushrooms and reserved parsley mixture to skillet. Reduce heat to medium; cook 2 to 3 minutes, stirring frequently, until mushrooms are almost tender.

    In small bowl, mix wine and cornstarch until smooth. Add to skillet; cook about 1 minute, stirring frequently until mixture thickens. Return pork and juices to pan; cook 1 to 2 minutes or until thoroughly heated. Serve with potatoes. Sprinkle with sage.
