Fiery Fettuccine

Here’s a fettuccine you’ve never seen before. It’s super easy to make, relying on already-cooked sausage and a jar of roasted red bell peppers for fantastic flavor.

Ingredients

ounces uncooked fettuccine
1
cup whipping (heavy) cream
1
teaspoon Creole or Cajun seasoning
1
jar (7 ounces) roasted red bell peppers, drained
1/2
pound fully cooked smoked sausage, cut in 1/4-inch slices
2
medium green onions, sliced (1/4 cup)

  • 1 Cook and drain fettuccine as directed on package.
  • 2 While fettuccine is cooking, place whipping cream, Creole seasoning and bell peppers in blender or food processor. Cover and blend on high speed until smooth.
  • 3 Pour pepper mixture into 12-inch skillet. Cook over medium heat, stirring occasionally, until mixture thickens. Stir in sausage; heat through but do not boil.
  • 4 Serve sausage mixture over fettuccine. Sprinkle with onions.

Cajun seasonings are boldly flavored spice blends. Although many types are available in the grocery store spice aisle, most contain some combination of garlic, onion, chilies, black pepper, mustard and celery.

Using roasted red peppers from a jar saves lots of roasting time in the kitchen! Look for them near the spaghetti sauces and Italian ingredients or near the canned vegetables in your grocery store.

This recipe is so easy and tasty. My whole family absolutely loved it and I will be making again and again. I put mine over brown rice instead of fettuccine and it was great.

Easy, and delicious! As a fan of spicy foods, this dish was a real treat to my palate. I substituted cayenne for cajun seasoning, and added more than was needed. Great recipe!
