Easy Cheese and Bacon Quiche

Ingredients

  • 1 1/4 cups Bisquick™ Original Pancake & Baking Mix
  • 1/4 cup butter, softened
  • 2 tablespoons boiling water
  • 1 package (6 oz) sliced Canadian bacon, chopped
  • 1 cup shredded Swiss cheese (4 oz)
  • 4 medium green onions, thinly sliced (1/4 cup)
  • 1 1/2 cups half-and-half
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)

Instructions

    Heat oven to 400°F. Grease the bottom and side of a 9-inch pie plate with shortening.

    In a large bowl, stir Bisquick and butter until blended. Add boiling water; stir vigorously until a soft dough forms. Press dough in the bottom and up the side of the pie plate, forming an edge on the rim of the plate.

    Sprinkle bacon, cheese, and onions over the crust. In a medium bowl, beat half-and-half, eggs, salt, and red pepper with a spoon until blended. Pour into the crust.

    Bake 35 to 40 minutes or until the edge is golden brown and the center is set. Let stand 10 minutes before serving.
