cups Original Bisquick® mix
1/2
cup cold water
1
can (16 oz) Old El Paso® refried beans
2
cups cooked rice
1/2
cup Old El Paso® Thick ‘n Chunky salsa
2
cups shredded Cheddar cheese (8 oz)
2
cups shredded lettuce
1
cup chopped tomato
1/4
cup sliced ripe olives
Additional salsa, if desired
Sour cream, if desired
  • 1 Heat oven to 375°F. Spray 13x9-inch pan with cooking spray.
  • 2 In medium bowl, stir Bisquick mix and cold water until soft dough forms. Press evenly in bottom of pan.
  • 3 Spread beans over crust. In small bowl, stir together rice and 1/2 cup salsa. Spread evenly over beans. Top with cheese.
  • 4 Bake 25 to 30 minutes or until cheese is melted and crust is golden brown. Top with lettuce, tomato and olives. Serve with additional salsa and sour cream.

Made this last night. I cut up steak, browned it and let it simmer a few minutes in taco mix and water, then layered it on top of the beans. It was pretty good.

Made this for supper and we were really disappointed. Need more spices in the meat mixture & the topping layer came out way too much. I was sorry to have wasted the green chiles & the ground beef. We had to bake it an extra 10 minutes which may have made the topping dry. Might be able to add taco seasoning to the ground beef for a little more flavor, and maybe use more cheese, adding some to the crust mix.

Quick and easy, but a little bland. I used ground beef and added black beans. Next time some chilies or spicier salsa might give it a little zing.
