A fabulous recipe from our Betty Crocker Bisquick Quick to the Table cookbook. Add an extra-layer of churro yumminess by serving these churro pancakes with the Cinnamon Smear below.

    Heat nonstick griddle to 300°F; brush with 1 tablespoon of the oil.

    In large bowl, mix sugar and cinnamon; reserve 2 tablespoons and set aside. Add Bisquick mix and milk to remaining cinnamon-sugar mixture in large bowl. Mix until only a few lumps remain.

    Spoon half the batter into quart-size resealable plastic bag; cut small tip from one end. Pipe batter onto hot griddle in 3-to 4-inch spirals starting at the center and working out, leaving about 1/4 inch space between lines. Cook 30 to 60 seconds on each side or until lightly browned. Immediately sprinkle each pancake with 1 teaspoon of the reserved cinnamon-sugar.

    Brush griddle with the remaining 1 tablespoon of the oil. Repeat with remaining batter and cinnamon-sugar.

Tips from the Betty Crocker Kitchens

  • tip 1
    The batter will thicken as it stands, so you may need to adjust the amount of space between the spirals as you pipe the batter.
  • tip 2
    Use a brush for greasing the griddle. If you don’t have a griddle, a 12-inch skillet will work, too, but it will take several batches to make all the pancakes. Cook over medium-low heat, and keep an eye on the heat to avoid overbrowning. Be sure to sprinkle the pancakes with the cinnamon-sugar while warm.

    To make Cinnamon Smear , in a small bowl, mix 1/4 cup softened butter, 3 tablespoons maple-flavored syrup and 1/4 teaspoon ground cinnamon. Spread on the pancakes before sprinkling with the cinnamon-sugar.
