Chorizo and Pasta

Italian noodles go to Mexico when you add spicy chorizo sausage along with ready-to-use canned tomatoes with garlic and onion.

Ingredients

lb bulk pork chorizo sausage

medium onion, finely chopped (1/2 cup)
1
can (14.5 oz) organic diced tomatoes with garlic and onion, undrained
1 3/4
cups Progresso® chicken broth (from 32-oz carton)
5
cups uncooked dumpling egg noodles or wide egg noodles (8 oz)
1/2
cup water

  • 1 In 12-inch nonstick skillet, cook chorizo and onion over medium-high heat 8 to 10 minutes, stirring frequently, until chorizo is no longer pink and onion is tender.
  • 2 Stir in remaining ingredients. Increase heat to high; heat to boiling. Reduce heat to medium; cover and cook 10 to 15 minutes, stirring occasionally, until noodles are tender and mixture is desired consistency.

I did not use chorizo..I used Jenny –O Sweet Italian Turkey Sausage. I added one green pepper I could only find the tomatoes with the green chiles so I just used that. I would imagine you could use plain diced tomatoes and fresh jalapenos or Serrano peppers as well. Delicious and only 6 ingredients. My kind of recipe!

Great, easy recipe. Tip BC gives you is to use Mild Italian sausage when you can't find the chorizo. Simple meal. But filling and tasty.

This recipe is awesome......chorizo in my area is Portuguese and is readily available in every grocery store. 5 ingredients....what could be better than that? Perfect for busy days......love it!
