Caesar Chicken Subs

Ingredients

  • 4 submarine sandwich rolls (about 6 inch) or 1 baguette (8 oz)
  • 1/3 cup Caesar dressing
  • 1/2 package (3.5-oz size) sandwich sliced pepperoni
  • 3/4 lb deli rotisserie chicken (from 2- to 2 1/2-lb chicken), cut into about 1/4-inch slices
  • 4 slices (1 oz each) Colby-Monterey Jack cheese blend
  • 4 slices tomato, cut in half
  • 4 lettuce leaves
  • 1/2 medium red onion, thinly sliced

Steps

    Cut rolls horizontally in half (if using baguette, first cut into fourths). Spread dressing over cut sides of rolls.

    Layer bottom halves of rolls with pepperoni, chicken, cheese, tomato, lettuce and onion. Top with roll tops; press gently. Secure with toothpicks. Cut each sandwich diagonally in half.
