Chicken Salad Sandwiches

Cold rotisserie chicken makes a terrific chicken salad sandwich. Some people even make it with their favorite fast-food fried chicken and swear it's the best.

Ingredients

cups chopped cooked chicken or turkey
1
medium stalk celery, chopped (1/2 cup)
1
small onion, finely chopped (1/3 cup)
1/2
cup mayonnaise or salad dressing
1/4
teaspoon salt
1/4
teaspoon pepper
8
slices bread

Directions

  • 1 In medium bowl, mix all ingredients except bread. Spread mixture on 4 bread slices. Top with remaining bread.

Expert Tips

For 6 grams of fat and 260 calories per serving, use fat-free mayonnaise.

Substitute 6 Hard-Cooked Eggs, chopped, for the chicken.

Substitute 1 1/2 cups chopped fully cooked ham for the chicken. Omit salt and pepper. Stir in 1 teaspoon yellow mustard.

Substitute 2 cans (5 oz each) tuna in water, drained, for the chicken. Stir in 1 teaspoon lemon juice.
