Bunny Surprise Cake

Blogger Christy Denney of The Girl Who Ate Everything shares a favorite recipe Bunny Surprise Cake. This bunny cake starts with a vanilla cake mix and is decorated to look like an Easter bunny with coconut and assorted candies. By adding some Easter colors to the batter a colorful surprise awaits when each slice of cake is served.

box Betty Crocker® SuperMoist® vanilla cake mix
Water, vegetable oil and eggs called for on cake mix box
Pink, purple and yellow food colors
Frosting and Decorations

containers Betty Crocker® Whipped fluffy white frosting
3
cups flaked coconut
Red licorice rope
Jelly beans
Betty Crocker® pink colored sugar
  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Spray or grease bottoms only of two 9-inch round cake pans. Make cake batter as directed on box.
  • 2 Divide cake batter evenly among 3 separate bowls (about 1 cup for each bowl). Dye each bowl a different color with pink, purple or yellow food color. Pour half of the purple batter into each of the 9-inch round pans. Pour half of the yellow batter over top of the purple layer in each pan. Pour half of pink batter over yellow batter in each pan. Do not mix.
  • 3 Bake and cool cake as directed on box for two 9-inch rounds. Cool 10 minutes. Remove from pans to cooling racks. Cool completely, about 1 hour.
  • 4 Place one of the cooled cake rounds on serving tray. Cut other round cake as shown in Diagram A below and place ears and bow tie of the bunny in appropriate places on the tray.
  • 5 Carefully frost cake with frosting. Sprinkle coconut over cake. Use licorice to outline bow tie and make whiskers and mouth on bunny. Use jelly beans for eyes, nose, and to fill in bow tie. Use pink sprinkles to fill in pink of the ears. Store covered at room temperature.

So happy to find the recipe/ idea. My Mother died in 2006 but she made these when I was a child and then for my 2 boys. I will put my own spin on it but I like the chocolate icing idea and also the cool whip icing. Happy to have the picture of it finished with the candy face. Thanks!

This cake is fantastic and gets changed up every year. I have a son who was born on Easter Monday and his birthday falls around easter every year. I have changed in many times, sometimes I use coloured coconut, other times coloured icing. I have thrown chocolate eggs into the mixture and coloured candies instead of the food colouring. I also wrap in waxpaper, coins for a birthday present (just remember to put toothpicks in so the birthday child gets the coins). We use licorice for the mouth and whiskers and oreos for the eyes. We have used a large assortment of candies for the bowtie. Love this cake and will make it again this year for Easter. Sons birthday is two weeks later, so he will get another kind of bunny cake that I also make, he will be 19 now and has asked for a bunny cake. look forward to another year of hoppyness.

I have been making this cake every Easter for 30 years first with my children and now with my grandchildren. This year the youngest of the 9 will do the frosting.! I am going to try the color layers. Seems like fun!!
