Black Beans and Ham

large onion, chopped (1 cup)

cup chopped red or green bell pepper

cans (15 oz each) Progresso® black beans, undrained

cups cubed fully cooked ham

teaspoons chili powder

cups Original Bisquick® mix
1/3
cup cornmeal
2/3
cup milk
1/2
cup shredded Cheddar cheese (2 ounces)
  • 1 Heat oil in 4-quart Dutch oven over medium heat. Cook onion and bell pepper in oil, stirring occasionally, until tender. Stir in beans, ham and 1 teaspoon of the chili powder. Heat to boiling; reduce heat to low.
  • 2 Stir Bisquick mix, cornmeal and milk and remaining 1 teaspoon chili powder in medium bowl until soft dough forms. Drop by 6 spoonfuls onto simmering bean mixture.
  • 3 Cook uncovered 10 minutes. Cover and cook 8 minutes longer. Sprinkle with cheese. Cover and cook about 2 minutes longer or until cheese is melted.

I am an aged cook, expierenced in revising recipes to include whatever is on hand or to my boyfriends finiky tastebuds. I used one can of the black beans plus one small can of sliced black olives and juice. Instead of the chili powder (heartburn), I used one tsp. each of garlic and onion powder to the beans. I cut the ham in fairly large chunks, I like to taste the meat instead of using it just as a flavor enhancement. I also included a half cup of lightly thickened chicken stock so the ham and bean mixture was not quite so watery. I made the dumplings according to recipe but substituted the chili powder with one tsp. of garlic powder and one tab. of parmesan cheese and always some dry parsley. The dumplings were perfect. We had huge second helpings and almost went back for thirds. Recipes inspire me to be the cook I am today. Thank you Betty Crocker for the inspiration.

Easy and very good. I used 2 cans of seasoned black beans, e.g. S&W carribean flavor which really enhanced the flavors. Next time I will halve the bisquick/cornmeal dumplings so the bean mixture retains more of its liquid. Very tasty.

I started with dried beans, so I had lots of "juice" - more than you would have with canned beans. I added extra mild to the cornbread mixture and treated it like dumplings. The whole family loved it, even my husband who started out suspiciously inquiring about the percentage of meat to beans.
