If you haven’t jumped on the veggie burger wagon yet—or maybe you tried a veggie burger years ago and it left a bad taste in your mouth—it might be a good time to try them again. Veggie burgers have come a long way, baby! (And this from a girl who loves her hamburgers, by the way.)
My veggie burger of choice: Black Bean Burgers. Upon first glance, you might not even realize there isn’t any “meat” in there.
Black beans are packed with protein and are GOOD. These beans start out with a mash, and then it’s time to pack them with flavor. We add onion and bell pepper. Next, hit them with a good dash of seasoning. What holds this all together? Egg and bread crumbs. These little babies are baked not fried. So, yes, the good-for-you trend continues.
Top them off with creamy avocado slices, a squeeze of lime juice and cilantro, and you’ve got yourself one bodacious burger!
