Progresso Broth

Ingredients

  • 3 slices bacon, chopped
  • 1 lb lean (at least 80%) ground beef
  • 1 can (21 oz) baked beans
  • 1 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 1 can (5.5 oz) vegetable juice
  • 3 tablespoons ketchup

    In 2-quart saucepan, cook bacon over medium-high heat 2 minutes. Add beef; cook 5 to 8 minutes, stirring occasionally, until beef is thoroughly cooked; drain.

    Add remaining ingredients; mix well. Cover; cook over medium heat 10 minutes, stirring occasionally, until thoroughly heated.

  • The 5.5-oz can of vegetable juice is an individual serving-size can. Or you can measure about 2/3 cup juice from a large container.
  • Garnish each serving of this soup with a dollop of sour cream, a sprinkling of shredded cheese and some sliced green onions.
  • Serve this hearty soup with a mixed green salad and warm cornbread sticks.
