Cucumbers offer up the simple flavors of summer. Here are a few of my favorite ways to serve up this splendid vegetable.
If you've grown your own garden, shopped at the farmers market or hit up your local grocery store, chances are you've seen a bounty of cucumbers available. 'Tis the season for this simple green vegetable!

Common though they may seem, the simple cucumber can be served up in stunning side dishes that feature its fresh colors and flavor.
Try these three fun, quick and unique ways to use cukes in your kitchen:
- Get Fresh. Toss sliced cucumbers into a pitcher of ice water or a glass of lemonade to add a cool, crisp twist.
- Stack 'Em. Slice cucumbers and serve them on top of bagels and cream cheese with a salted tomato on top. A mound of sprouts will finish off this easy, open-faced sandwich with a healthy bit of flair.
- Make a Granita. Sugary, fruity shaved ice mixed with the freshest flavors of the season, granita is a grown-up snow cone. You might not think to add cucumber to such a thing, but this Cucumber-Lime Granita is absolutely bright, light and beautiful! Try it today!
