These were absolutely delicious!!! I made a few changes by using egg beaters for the egg. I used dried cranberries for the blueberries and I added some flaxseed for extra goodness. Family and friends thought there were the best!!!

I made these to share at an all-weekend scrapbooking event and everyone LOVED them. I had my husband help make them the night before and I had to beg him to stop eating them as they came out of the oven so I would still have enough to share. They are the perfect snack when you want something to munch that is not too sweet. The blueberries added a great twist to the flavor. Mine did not spread as much as the ones in the official photo, but they were still done at 13 minutes and wonderfully soft in the middle.
