oz (half of 8-oz package) cream cheese, softened

Old El Paso® flour tortillas for soft tacos and fajitas (6 inch)
1/4
cup Old El Paso® Thick 'n Chunky salsa (any variety)

lettuce leaves
4
oz smoked cooked turkey or ham, cut into strips

oz Cheddar cheese, cut into strips
1
small red bell pepper, cut into strips
  • 1 Spread cream cheese evenly on top 2/3 of each tortilla. Spread salsa over cream cheese.
  • 2 Place lettuce leaf on each tortilla. Top with turkey, cheese and bell pepper strips.
  • 3 Fold up bottom 1/3 of each tortilla, then roll up to make cone shape with folded end on bottom. Keep tortilla in cone shape with toothpick. Serve with additional salsa if desired.

This is a pretty basic recipe, but I am not very good at thinking up sandwiches so it's perfect for me! I just shredded some deli sliced turkey, today for a change I am using leftover rotisserie chicken. And I am using shredded cheddar. With a lower-cal/carb tortilla, it's a great healthy lunch. I do think the cone idea is a little silly, I just roll it up like a wrap because that's a lot easier to eat.

My husband is an invalid and picky, picky, picky, and this recipe, with some modifications, pleased him a lot. I didn''t have any turkey on hand the day I found it, but I did have a left-over baked chicken breast which I cut into strips. This called for Swiss cheese strips instead of Cheddar. Instead of decorative toothpicks, I used two regular picks and topped each one with a small black olive. I served small corn chips and a small container of salsa, making the plate attractive and he was all smiles for a change. Nothing to serve weekly, but to add a little spice to life occasionally, I will be going back to this page.
