oz refrigerated cooked Southwest-flavor chicken breast strips (from 9- or 12-oz package)

cup Old El Paso® Thick 'n Chunky salsa

package (11 oz) Old El Paso® flour tortillas for burritos (8 inch; 8 tortillas)
Cooking spray

cups finely shredded Colby-Monterey Jack cheese blend (8 oz)

cup sour cream
  • 1 Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
  • 2 Spray 1 side of 1 tortilla with cooking spray; place sprayed side down in 10-inch nonstick skillet. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.
  • 3 Cook uncovered over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

Expert Tips

If you can't find the refrigerated seasoned chicken, substitute 1 1/2 cups diced cooked chicken.

A salad of fresh melon chunks, pineapple and berries, plus glasses of lemonade or iced tea will add a cool, fresh touch to these yummy quesadillas.

To make Quick Chicken-Vegetable Quesadillas, sprinkle 2 tablespoons chopped tomato, 1 tablespoon sliced ripe olives and 1 tablespoon sliced green onions over the cheese for each quesadilla.

    When I go on sites like Betty Crocker or Pillsbury I expect to find their products showcased.I think perhaps some dont understand that is exactly why they have a recipe site.For those who dont want too see product placement I suggest you try one of the thousands of regular recipe sites out there not generated by a product company.I the same can be said of the next review.When I look for "healthy" or "home made" recipes I dont expect to find them here. You need to try the healthy living websites that provide low sodium etc recipes and ones that dont require premade products. That said I thought these were good and they were gone in record time.My brother and niece loved them.

    This recipe, as with so many on this site, leave me with an inner scream of "enough with the product placement, already". Betty Crocker folks need to remember that this is the WORLD wide web - most places outside of America have never even heard of Old El Paso, or Boobers whatsits or Green Midget thingamabobs, and even though I know of the products there's no way I'd use them... once you've tasted real (and very simple!) homemade salsa, there's no going back to the jarred glob of chemicals. Please return to your roots of made-from-good-'ol SCRATCH recipes. (This review can, and should, be applied to any other recipe I find on here with ready-made products as the main ingredients... most I can't use because of that fact.)
